Custodian Recipes: Jollof Quinoa

Healthy doesn’t mean doing away with your favourite meals. Custodian Fitness has been experimenting in the kitchen to bring you exciting recipes which will be rolling out every week.

Jollof Quinoa
Ingredients:
A tin of chopped tomatoes
1 medium sized pepper
1 medium onion
2tsp of curry
Bay Leaf
2 Maggi cubes
1tsp of pimento pepper
1tsp of thyme
1tsp of oil ( enough to lubricate the pan)
250grams of quinoa
Before cooking:
Blend the tomatoes, pepper and onion (leave 1/4 for use later) together.
Cube the rest of the onion left and set aside.
Weigh out the quinoa.
During Cooking:
Using a none stick pan, a teaspoon of oil and the spices, caramelise the cubed onions on low heat.
Add the blended mixture and stir thoroughly.
Leave on very low heat, with a lid on  to simmer for 15 minutes, this should get rid of the sharp tomato taste.
Meanwhile, begin preparing the quinoa.
Rinse the quinoa in cold water and drain.
Pour warm water to rinsed quinoa, boil for 7 minutes and then drain
Set aside and wait for the tomato sauce to be ready.
When you’re happy with the taste, slowly stir in tomato with quinoa, until  the quinoa is completely covered in the sauce but not soggy!
Cover and let it simmer for 8-10 minutes on very low heat.

‘Fried’ Quinoa
Ingredients
250 grams of mixed veg
2 knorr cubes
250 grams of king prawns
250grams of quinoa
1/2 a medium onion
1 tsp of oil ( any but olive oil!)
1tbsp of curry
Before cooking:
Cube the onion
Rinse Quinoa 

During Cooking:
Add oil, onions and all spices into a none stick pan on low heat, leave for 5 minutes.
Now add mixed veg and prawns , mix  thoroughly and leave for 10 minutes.
Meanwhile, begin preparing the quinoa.
Rinse the quinoa in cold water and drain.
Pour warm water to rinsed quinoa, boil for 7 minutes and then drain
Set aside and wait for the veg mix to be ready.
When you’re happy with the taste, slowly stir the quinoa into the veg mix until  the quinoa is completely covered but not soggy!
Cover and let it simmer for 8-10 minutes on very low heat.
Enjoy!!
